Whole turbot and txuleta

In the Basque Country an asador is a restaurant whose kitchen is organized around the grill. Its two signature products are whole fish — above all turbot (rodaballo), grilled with coarse salt — and the txuleta, a thick beef steak cooked over charcoal.

The asador shares its txuleta with a second Basque institution, the cider house (sidrería, in Basque sagardotegi), where the steak is one course of a fixed seasonal menu.

Two houses: Elkano and Etxebarri

Two restaurants frame the modern history of the style. In Getaria, on the coast of Gipuzkoa, Pedro Arregui turned his mother's grocery into a bar with a grill in the street; that bar became Elkano. Arregui is credited with designing the hinged wire baskets that hold a whole fish on the grill, now widely used. His son Aitor runs the restaurant, which was ranked No. 24 in The World's 50 Best Restaurants in 2025.

Inland, in Axpe (Atxondo, Bizkaia), Victor — in Basque, Bittor — Arguinzoniz opened Asador Etxebarri in 1990. It holds one Michelin star and was ranked No. 2 in The World's 50 Best Restaurants in 2024 and 2025.

Grills that rise and fall

The asador cooks at high heat over embers. At Etxebarri the chef designed the grills himself; they can be raised and lowered to change the distance from the embers. The embers are also made on site, in dedicated ovens, from different woods such as oak and vine cuttings.

For fish, the hinged basket attributed to Arregui holds a whole turbot so that it can be handled over the fire as a single piece. The general technique is covered under grilling over fire.

Old cows and oxen, 5 cm thick

The beef of the txuleta comes from older animals. According to butchers who supply the style, they use cows — often former dairy cows — or oxen aged 12 to 20 years, sourced in Galicia, in northern Portugal and further afield.

The steaks are cut about 5 cm / 2 in thick and grilled over charcoal. Coarse salt goes on during cooking and fine salt at serving; the steak is turned once.

Txotx: the cider-house sequence

In an asador the txuleta and the whole fish are the center of the menu. In a cider house the steak is part of a set sequence during the cider season, from mid-January to April or May: cod omelette, cod with peppers, txuleta, and to finish Idiazabal cheese with quince and walnuts. At the call of "txotx!" diners get up and catch cider straight from the barrel (kupela) into their glasses. The town of Astigarraga alone has more than 20 cider houses.

Etxebarri and Elkano

Asador Etxebarri (Axpe, 1990), known for grills designed by its chef and embers made in its own ovens; and Elkano (Getaria), associated with whole grilled turbot and the hinged fish basket.
