Steakhouses in New York

New York is where the American steakhouse took shape: Delmonico's has served steak in the Financial District since 1837, Peter Luger has carved porterhouse for two in Williamsburg since 1887, and USDA Prime beef dry-aged on the premises remains the city's standard.

The New York steakhouse grew out of nineteenth-century chophouses and taverns. Delmonico's, in the Financial District since 1837, gave its name to a ribeye; Old Homestead opened in the Meatpacking District in 1868, Keens in 1885 and Peter Luger in Williamsburg in 1887. Gallaghers began as a speakeasy on West 52nd Street in 1927. In Brooklyn, Gage & Tollner (1879) reopened in its landmarked dining room in 2021.

The classic format is the porterhouse for two or more, carved at the table, with creamed spinach and potatoes. Most chophouses buy USDA Prime beef and dry-age it on site, usually for about four weeks: Smith & Wollensky states 28 days or more, Gallaghers 28–30 days in a glass-fronted locker, and Peter Luger ages its hand-selected Prime on the premises. Steaks are usually cooked under very hot broilers; Gallaghers cooks over hickory coals.

Since 2017 other traditions have joined the chophouse. Cote, in Flatiron, combines Korean barbecue with dry-aged USDA Prime and American Wagyu and holds a Michelin star; Japanese yakiniku counters serve Wagyu omakase; Hawksmoor, from London, cooks pasture-raised northeastern beef over charcoal; and in 2026 the team behind Buenos Aires' Parrilla Don Julio opened an Argentine parrilla in the West Village. Midtown East and the Theater District hold the densest cluster of steakhouses.

Also in the city: branches of national chains such as Ruth's Chris, Morton's, The Capital Grille, Del Frisco's, Mastro's and Fogo de Chão. Porter House Bar and Grill at Columbus Circle closed in 2025.
